When prunes and apricots were king crop in Saratoga in the 1890s, the larger fruit packing companies owned large warehouses to sort and prepare the fruit. Pictured is the Sorosis Fruit Packing Company’s warehouse near today’s Quito Road and Saratoga Avenue. The evaporator or dryer was on the first floor. The upstairs was the work area in packing season. In the off season it became the local social hall for music, lectures and meetings. Although there were social halls in downtown Saratoga, this was the only one in that area.
